Ratatouille

Ingredients
- 1 Eggplant
- 2 Zucchini
- 6 Roma Tomatoes, organic
- 1 Onion
- 2 Garlic Cloves
- 1 jar Tomato sauce
- 2 tbsp Extra Virgin Olive Oil
- 1/2 cup Parmigiano Reggiano
- Sea Salt
- Pepper
- Basil to garnish (optional)
Instructions
- Preheat oven to 400 degrees. Evenly and thinly slice eggplant, zucchini and tomatoes. Dice onion and mince garlic. Heat 1 Tbsp oil in skillet. Saute onion and garlic. Transfer to round or oval shaped baking dish.Add tomato sauce Arrange eggplant, zucchini and tomatoes in a spiral pattern Drizzle with 1 tbsp oilAdd salt and pepper. Cover with foil. Bake for 1 hour. Add shredded Parmigiano Reggiano to taste.
