Butternut Turkey Black Bean Chili

Ingredients
  

  • 1 lb. ground turkey
  • 1.5 lbs butternut squash, peeled and cubed
  • 1 can black beans
  • 1/2 large onion, sliced
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1 jalepeno pepper, sliced
  • 1 can diced tomatoes, organic, BPA-free
  • 2 cups vegetable broth
  • 1 T Extra virgin olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt/pepper to taste
  • Cilantro, chopped, as garnish

Instructions
 

  • Brown turkey and set aside.  Add olive oil to pan, saute onion, peppers for about 5 mins.  Add spices, squash, black beans, tomatoes and broth and stir.  Bring to a low boil and simmer for about 20 mins or until sauce thickens a bit.  Garnish with fresh cilantro.

Notes

Other garnishes may include hot sauce and/or sour cream (if tolerated). Freezes well; make a double batch!
