Butternut Turkey Black Bean Chili
Ingredients
- 1 lb. ground turkey
- 1.5 lbs butternut squash, peeled and cubed
- 1 can black beans
- 1/2 large onion, sliced
- 1 green pepper, diced
- 1 red pepper, diced
- 1 jalepeno pepper, sliced
- 1 can diced tomatoes, organic, BPA-free
- 2 cups vegetable broth
- 1 T Extra virgin olive oil
- 1 tsp cumin
- 1 tsp chili powder
- Salt/pepper to taste
- Cilantro, chopped, as garnish
Instructions
- Brown turkey and set aside. Add olive oil to pan, saute onion, peppers for about 5 mins. Add spices, squash, black beans, tomatoes and broth and stir. Bring to a low boil and simmer for about 20 mins or until sauce thickens a bit. Garnish with fresh cilantro.
Notes
Other garnishes may include hot sauce and/or sour cream (if tolerated). Freezes well; make a double batch!
