Chicken Kale Peanut Salad

Ingredients
- 1 lb Chicken Breast, organic, poached, sliced thin
- 1 Cucumber, chopped
- 1 jicama, chopped
- 1/4 lb Carrots, shredded
- 1/2 Red Pepper, organic, sliced thin
- 1/4 Red Onion, sliced thin
- 6 large Kale Leaves, chopped
- 1 cup Napa (or red) Cabbage, sliced thin
- 4 Radishes, julienned
- 1/2 cup Peanuts, organic, chopped
Dressing
- 1/4 cup Rice Vinegar
- 2 tbsp Coconut Aminos or Tamari
- 1/4 cup Sesame Oil
- 1 tbsp Coconut Sugar
Garnishes
- cilantro
- lime
- mint
Instructions
- Add all salad ingredients into large bowl. Drizzle dressing over salad. Toss to mix.Garnish with cilantro and lime.
