Chicken Kale Peanut Salad

A visually appealing, filling, healthy main dish salad.

Ingredients
  

  • 1 lb Chicken Breast, organic, poached, sliced thin
  • 1 Cucumber, chopped
  • 1 jicama, chopped
  • 1/4 lb Carrots, shredded
  • 1/2 Red Pepper, organic, sliced thin
  • 1/4 Red Onion, sliced thin
  • 6 large Kale Leaves, chopped
  • 1 cup Napa (or red) Cabbage, sliced thin
  • 4 Radishes, julienned
  • 1/2 cup Peanuts, organic, chopped

Dressing

  • 1/4 cup Rice Vinegar
  • 2 tbsp Coconut Aminos or Tamari
  • 1/4 cup Sesame Oil
  • 1 tbsp Coconut Sugar

Garnishes

  • cilantro
  • lime
  • mint

Instructions
 

  • Add all salad ingredients into large bowl. Drizzle dressing over salad. Toss to mix.
    Garnish with cilantro and lime.
