Ingredients
1 Eggplant
2 Zucchini
6 Roma Tomatoes, organic
1 Onion
2 Garlic Cloves
1 jar Tomato sauce
2 tbsp Extra Virgin Olive Oil
1/2 cup Parmigiano Reggiano
Sea Salt
Pepper
Basil to garnish (optional)
Instructions
Preheat oven to 400 degrees.
Evenly and thinly slice eggplant, zucchini and tomatoes.
Dice onion and mince garlic.
Heat 1 Tbsp oil in skillet.
Saute onion and garlic.
Transfer to round or oval shaped baking dish.
Add tomato sauce
Arrange eggplant, zucchini and tomatoes in a spiral pattern
Drizzle with 1 tbsp oil
Add salt and pepper.
Cover with foil.
Bake for 1 hour.
Add shredded Parmigiano Reggiano to taste.
